Spinach Gnocchi

Ingredients
  • 2 pounds fresh spinach

  • 1.5 pounds ricotta

  • 2 egg yolks

  • salt and pepper to taste

  • 1 tsp sage

  • drizzle olive oil

  • 1/2 can marinara sauce

  • 1/4 cup parmesan cheese, plus a few tablespoons

Instructions
  1. Preheat the oven to 350 degrees. Blanch the spinach by submersing it in boiling water for 1-2 minutes. Using a slotted spoon, transfer immediately to an ice water bath and let sit for another minute. Remove spinach from water and press dry with paper towels.

  2. Place the spinach in a bowl and mix in the ricotta, egg yolks, parmesan cheese and spices. When incorporated, roll the mixture into 1.5 inch balls using the palms of your hands, and place in a baking dish.

  3. Top the gnocchi with a drizzle of olive oil, then the marinara sauce, and finally the remaining parmesan cheese. Bake for 35 minutes or just until cheese starts to brown.
