Southern Cornbread Dressing

Ingredients
1 large iron skillet baked cornbread (baked without wheat flour)
1 loaf coconut bread
1 large yellow onion chopped
2 stalks of celery
3/4 cup coconut oil
3 cloves minced garlic
4 large eggs
3 tbsp of poultry seasoning (or to taste- I usually add a little fresh sage to the mixture)
1 to 1.5 quarts of chicken or vegetable stock
Salt and pepper
Instructions
Tear breads into pieces. Soak in chicken stock for a half hour in a very large bowl.
Preheat the oven to 350. Add the rest of the ingredients to the bread and mix using hands.
Pour into a buttered dish. Bake for an hour or until it is set. Serve warm.
