Southern Cornbread Dressing

Ingredients
  • 1 large iron skillet baked cornbread (baked without wheat flour)

  • 1 loaf coconut bread

  • 1 large yellow onion chopped

  • 2 stalks of celery

  • 3/4 cup coconut oil

  • 3 cloves minced garlic

  • 4 large eggs

  • 3 tbsp of poultry seasoning (or to taste- I usually add a little fresh sage to the mixture)

  • 1 to 1.5 quarts of chicken or vegetable stock

  • Salt and pepper

Instructions
  1. Tear breads into pieces. Soak in chicken stock for a half hour in a very large bowl.

  2. Preheat the oven to 350. Add the rest of the ingredients to the bread and mix using hands.

  3. Pour into a buttered dish. Bake for an hour or until it is set. Serve warm.
