Quinoa and Kale Salad

Ingredients
  • 1 cup of quinoa (prepare as directed on the package)

  • 3 cups kale

  • 1 tablespoon chopped sun dried tomatoes

  • 3 tablespoons toasted pine nuts

  • 1/4 cup chopped red onion

  • 1/4 cup feta cheese (Chervil)

  • several chopped raw asparagus stalks

  • diced hard-boiled egg

  • Champagne Vinaigrette, recipe HERE

Instructions
  1. Toss the salad ingredients, except the egg, with the dressing. Garnish with the egg cut into slices, and serve.
