Ingredients
1 cup of quinoa (prepare as directed on the package)
3 cups kale
1 tablespoon chopped sun dried tomatoes
3 tablespoons toasted pine nuts
1/4 cup chopped red onion
1/4 cup feta cheese (Chervil)
several chopped raw asparagus stalks
diced hard-boiled egg
Champagne Vinaigrette, recipe HERE
Instructions
Toss the salad ingredients, except the egg, with the dressing. Garnish with the egg cut into slices, and serve.
