Miss Dot's Chicken Wonder Soup

Ingredients
  • 2 quarts of chicken stock, recipe HERE

  • ½ of the chicken used to make the stock, chopped

  • 3 tablespoons coconut oil

  • 1 can diced tomatoes (I actually can my own tomatoes and use that)

  • ½ cup diced celery

  • ½ cup diced carrots

  • ½ cup diced onions

  • 1 cup of fresh sliced shiitake mushrooms

  • 1 cup diced bok choy

  • 1 cup shredded kale

  • 1 cup chopped fresh baby spinach

  • 2 cans cannellini beans

  • ¼ chopped parsley (or cilantro/Italian parsley if you like a little more spice)

  • 1 teaspoon rubbed sage (or 2 tablespoons fresh sage)

  • 1 teaspoon of ground coriander

  • 1 teaspoon dried thyme (1 tblsp of fresh thyme)

  • 1 teaspoon oregano

  • salt and pepper

Instructions
  1. In a very large pot, sauté celery, carrots, onions, and mushrooms in the coconut oil. Once the veggies are limp and translucent pour in chicken stock.

  2. Add the tomatoes, bok choy, kale and spinach and cook for a few mins. Add the beans and then the chopped up chicken. Stir.

  3. Add the spices and let that simmer for about 20 mins. Salt and pepper to taste.
