Egg Salad with Variations

Ingredients
  • 6 large eggs

  • 1/3 cup diced celery (about 1 stalk)

  • 1/3 mayonnaise, recipe HERE

  • 1 tsp lemon juice

  • 2 tablespoons dill pickle relish

  • 2 teaspoons Dijon mustard

  • 1/2 teaspoon kosher salt, plus more as needed

  • 1/4 teaspoon freshly ground black pepper, plus more as needed

Instructions
  1. Hard boil the eggs. While the eggs are cooking, prepare the rest of the ingredients. After the eggs have cooled, remove the shells, chop and add to a bowl. Mix with the other ingredients and serve.

Egg and Avocado Salad
  1. Take the classic egg salad recipe above and serve atop spinach with 1/2 sliced avocado.

Poppy Seed Egg Salad
  1. Add 1 tbsp. Poppy Seed Dressing to the classic recipe, and top with a large pinch of poppy seeds.

Chinese Egg Salad
  1. Add 1/4 cup each chopped water chestnuts and bamboo shoots, and mix in 1 tbsp. Braggs Amino Acids.

Sesame Egg Salad
  1. Make the mayonnaise with 1/4 sesame oil, and top the salad with a large pinch of sesame seeds.

Curried Egg Salad
  1. Add 1/4 cup curry powder to the basic recipe.

Confetti Egg Salad
  1. Add 1/3 cup diced bell peppers (assorted colors) to the basic recipe.

Cajun Egg Salad
  1. Add 1/4 cup Emeril’s Cajun Seasoning to the basic recipe.

Shrimp and Egg Salad
  1. Use Miss Dot’s remoulade sauce, recipe HERE, instead of the mayo, and add 1/3 cup chopped shrimp.

Chickpea Egg Salad
  1. Very briefly chop 1/3 cup chickpeas in a food processor and add to the basic recipe.

Ham and Egg Salad
  1. Add 1/3 cup chopped turkey ham or ham to the basic recipe.

Salsa Egg Salad
  1. Add 1/4 cup of your favorite salsa to the basic recipe.

Mediterranean Egg Salad
  1. Add 1/4 cup chopped Kalamata olives, and use olive oil in your homemade mayo

Dilled Egg Salad
  1. Add a small handful of fresh, chopped dill, and use half mayo and half Greek yogurt in the basic recipe.

Cheesy Egg Salad
  1. Add 1/3 cup grated raw cheddar cheese to the basic recipe.

Egg Salad Monte Cristo
  1. Add 1/4 cup grated raw milk Gouda cheese and 1/4 cup chopped turkey ham to the basic recipe.
