Ingredients
8 ounces (1 cup) bittersweet chocolate, chopped (darker the better, try 80%)
6 ounces (3/4 cup) coconut milk
1 tablespoon unsalted butter
1 tablespoon coconut oil
1/2 teaspoon vanilla
1 tablespoon freshly brewed espresso, or Kahlua
Assorted toppings: shredded coconut, chopped nuts, cocoa powder
Instructions
Heat coconut milk over medium heat until just boiling and pour hot milk over chocolate pieces. Add butter, oil, espresso and vanilla and let the mixture sit for five minutes. Stir gently with a whisk until completely melted. Cool completely at room temperature.
Scoop into tablespoon sized balls and roll in assorted toppings. Store in an airtight container in the refrigerator. Serve at room temperature.
