Coconut Cream Icing

Ingredients
  • 2 tbsp heavy cream

  • pinch of salt

  • 1 tsp coconut extract

  • 1 tsp vanilla extract

  • 2 sticks of butter, softened

  • 1/4 cup coconut cream (thick cream on top of canned coconut milk)

  • 3 tsp powdered stevia

Instructions
  1. Stir the cream, extracts, and salt together until the salt dissolves.

  2. In a separate large bowl, beat the butter and coconut cream with an electric mixer at medium-high speed until smooth. Add the stevia, then beat in cream mixture. Increase speed to medium-high and beat until the mixture is light and fluffy, 4-6 minutes.
