Ingredients
1 can coconut cream, chilled cream only
1 large avocado, pitted and scooped out of the skin
1/3 cup fresh key lime juice
2 teaspoons key lime zest
1 teaspoon powdered stevia
1 teaspoon agave syrup
dash salt
6" Pecan Crust, recipe HERE
Instructions
Chill a can of coconut milk in the fridge for at least 3 hours. Open can of coconut milk and carefully spoon off the thick cream that has risen to the top of the can (there will be about ½ can of coconut milk remaining). Blend coconut cream with avocado, lime juice & zest, stevia, agave and salt in the food processor until smooth and creamy.
Pour over crust and refrigerate for at least 3 hours. This also freezes well if you want to make it ahead of time.
